Swai Fish Curry 


Being a Bong, Fish is a must in my menu if not everyday, atleast  twice or thrice in a week. When I first moved to US, I only wanted to eat fish that are available in Bangladeshi grocery store, but gradually I started trying fresh fishes like Salmon, Snapper, Cod etc that are available here and I quite liked it. I started browsing different recipes on the web and also learnt some from my friends in Massachusetts . Few days ago  while browsing Facebook,I came across a fish-recipe in Bong Mom's CookbookIt was very easy and I decided to try it last weekend with some variations of my own and it was an instant hit. So yesterday, on a weekday night, I decided to make the dish again. Its super easy and quick.



I try to avoid oil so instead of frying them, I put them into the oven and grilled them for 15-20 mins. 



Ingredients :

 3 Fish Fillets ( u can take any fish of your choice). I had Swai so I used it
 1 small onion, diced
1 tomato
3-4 green chillies
1/2 inch ginger
4 cloves of garlic
1 tsp of Red chilly powder. If you don't want spicy simply use some Kashmiri Red Chilly Powder.
1 tsp of Coriander Powder
1/4 tsp of Meethi/ Fenugreek seeds
1 Dry Red Chilly 
1 tsp of Turmeric Powder
Salt as per your taste
Some curry leaf
Cilantro/Coriander leaf for garnishing (optional) .




After about 20 mins, the fishes are out from the oven.


Procedure :

Wash the fish fillets and pat them dry. Sprinkle some turmeric, salt and olive oil and put them on a baking tray into the oven to broil. It should take about 15-20 mins depending on your oven. Once they turn golden, take them out of the oven.
In a food processor, add the diced onion, tomatoes, green chillies, ginger and  garlic. Make it into a smooth paste.
Take a non stick pan and heat it over medium flame. Once the oil is hot, add the dry red chilly, meethi seeds and curry leafs. When they start to splutter, add the onion-tomato-greenchilly-ginger-garlic paste.
Add salt, red chilly/ kashmiri mirch powder and coriander powder . Cook for sometime till it leaves oil.  Add 1 cup of  water and let it boil. Add the fish pieces, cover it and let it cook for few minutes. Check the seasoning. You can put some cilantro for garnishing.



Serve hot with Rice.
